Vegan Baked Tofu Tikka

Tikka is a dish found in the Indian Subcontinent which can be eaten as a main meal or as an appetizer. Tikka normally refers to marinated pieces of meat, typically chicken or lamb, but I’ve substituted tofu here! I used an almond milk yoghurt for the base of the marinade with various spices, then marinated the tofu, onion and bell pepper, and baked in the oven. You can have it in a wrap or pitta pocket, or topped on rice or salad.



Make sure to press the tofu before marinating, at least 20 mins. The longer you press it the more moisture will be drained and the tofu will be able to absorb more of the marinade. Ideally you want to press the tofu and marinate it as long as you can so give yourself plenty of time.
