Barfi is a milk-based sweet from the Indian subcontinent made by cooking condensed milk and sugar until it solidifies. It can include nuts such as pistachios and cashews and flavored with spices like cardamom and rose. The name comes from the Persian word ‘barf’ meaning snow, and so I thought it would be perfect to share a barfi / snowy recipe for the holidays!⁣

Although barfi is traditionally made by cooking milk, this version is a vegan and raw cranberry and pistachio ball, and I think the look, taste and texture is just like barfi! The dried cranberries I used were sweetened and so if you are using plain ones, feel free to add more maple syrup or sweetener of your preference. Makes 12 energy balls.⁣
